Why Only Six
The menu is six pizzas and it has been six pizzas since the day the doors opened. Not because six is a magic number. Because six is the number this room can be honest about.
Every pie on the list earns its spot by moving — nothing sits long enough to need the walk-in’s cold storage or a Tuesday clean-out. Six pies means the mozzarella came in this morning, the soppressata gets sliced during setup, and the mushrooms never see a second day. There is no freezer at 8 Kiln Street. There is nowhere to hide.
It also means every pie gets the same attention. A long menu is a promise to be mediocre somewhere. She would rather make six things she can defend at the door than twenty she has to apologize for at the table.
The sixth slot does move with the seasons — the Garden is squash and peppers now, and it will be something else when the market says so. Five constants, one argument. That is the menu, and the menu is the philosophy.
